Tan Tan Pork Udon

















No bentos this week. Spring break for Lil P. We had the entire week planned, starting with Whale Watching, Lil P's baseball practice, and camping at a cabin on Monday, then Tuesday would be beach, Lil P's baseball game, and go to watch a basketball game. But everything went sour that afternoon, Lil P wasn't feeling well and end up with a low fever that night. He maintained 99-100 degrees the next day, only today he's back to normal temperature but still not feeling himself. The week is almost over. What a way to spend spring break huh?

Because I was busy taking care of him, and trying to study at the same time. I didn't have much time to post anything. This is what I made last week for me and Mr. P.

Lemon Caper Mahi Mahi



















Ack! I've been slacking off on this! I have been cooking and snapping pictures, just didn't have time to download the pictures or blog about it. Work had me traveling to neighbor islands, I've been tired, and I've been studying for a certification and planned to take the exam end of June. I also haven't exercised in 3 weeks. I planned on working out tonight (i've been saying it for a week now), and I know I'll be sore tomorrow...

Anyway, a friend of mine went out to sea and caught a huge Mahi, came to drop off some filets to us! So i was able to attempt this Mahi Mahi with lemon and caper.

Thank you for those who had voted for my Easy Peanut Butter Sandwich Surprise! I didn't win...but I was in 4th place out of 9! It was an awesome experience so Thank you Veggie Patch and The Sneaky Chef!!

I have been rather busy this past couple of weeks because I had to get ready for Lil P's 10th Birthday party which I will share with you after this recipe. I have made this dish a few weeks back actually but didn't have to time to post so here it is!

Mini Cheese Burger Manapua (bun)

















I like to buy bulk or family size ground beef and divide them up into 1 pound portions, put into ziplog bags, flatten them and put them in the freezer (save freezer space and it actually defrost quicker) as I have mentioned here. When it's time to make spaghetti, I would pull one of the bags out the night before and let it defrost in the fridge. After cooking the ground beef with diced garlic, onions, and black pepper, I would use only half of the cooked ground beef for the spaghetti sauce and save the other half for another dish for another day. This time, the other dish was mini cheeseburger Manapua (buns) for a quick grab and go meal for lil P.

Easy Peanut Butter Sandwich Surprise

















As I have mentioned previously here, I became one of the finalists or "Undercover Mothers" for the Ultimate Sneak-Away Contest hosted by Veggie Patch and The Sneaky Chef with my recipe of Easy Peanut Butter Sandwich Surprise. It was quite a surprise for me! For the final round, I needed to turn my recipe submission into a video that will teach other moms how to make it. Talk about pressure!

Chinese New Year came and went! Superbowl was just over too. So many things are coming up still: Lil P turns 10, Valentine's day, The Ultimate Sneak Away Contest video voting week, Lil P and Mr. P's birthday party. Then it will be March and spring break is around the corner!

Tonight is Chinese New Year's eve and traditionally it is the night you have a dinner gathering with your family. We'll be going to a chinese restaurant for dinner tonight. I wonder if there will be any lion dance?!
