Potato Salad with Imitation Crab, Singapore Chili Crab

















I made my first batch of potato salad when I was living in CA for a summer, nearly 10 years ago. Before I moved to CA, I have NEVER really cooked, my parents did all the cooking. But once I realized I'm on my own (despite having roommates), I need to start cooking. After moving back to Hawaii, I would make potoate salad for potlucks and gatherings. My friends' responses to my potato salad were very positive and they even request for it from time to time. I think that got me interested in trying different recipes. Well, that was just *part* of the reason, the other reason was Mr. P's inability to cook....but that's another story...

Potato Salad

Potatoes
Eggs
Imitation Crab
Mayonnaise
Salt
Pepper

Paprika

I don't have the measurements, because I do them to taste. For a large group, I normally do about 6-8 potatoes (or 8-10 reds), 3-4 eggs.

Potatoes: You can either peel and cut potatoes in cubes first before boiling them or you can peel the potatoes after. (You don't even have to peel for red potatoes) I used to peel and cut up first but I learned a trick a couple of years ago and have been doing it since. First, make a .2mm slit around the middle of the potato, length-wise. Then you let the potatoes boil in water. Remove the potatoes when done and immediately submerge them into a bowl of ice water for 10 seconds. Remove potatoes and gently pull the skin apart. Check out this video, it shows exactly what I was trying to say. Then cut them into cubes.

1) Boil eggs and potatoes together in a large pot with water.
2) Remove eggs and potatoes and let cool.
3) Meanwhile, shred crab meat (about half package) with 2 forks, place into a container.
4) Dice up eggs and potoates and place them in separate containers.
5) In a serving bowl, layer about a cup full of diced potatoes, then 1/4 cup of diced eggs, then shredded imitation crab, a dallop of mayo, then a dash of salt and pepper.
6) Mix them well and taste to add more mayo, salt, or pepper, if desire.
7) Repeat step 5 and step 6 on top of each mixed layer until all eggs, potatoes, and imitation crabs are used.
8) Sprinkle Paprika on top. Cover and store in refrigerator until ready to serve.

I never did take pictures of this...The next time I make this, I'll be sure to snap a quick photo to add to this post. The last time I made this was for my work's xmas party last year, they loved it and it was the first thing gone. I don't make this often because Mr. P and Lil P doesn't eat it. Lil P doesn't like anything with mayo in it (he doesn't know Honey Walnut Shrimp has mayo)! And Mr. P...well, he's just a different animal.
