I had friends visiting from Las Vegas so we had a get together last night. Feast included Ahi Poke, Caesar Salad, Kim Chee Fried Rice, Kalbi, Bacon Wrapped Shrimp and Asparagus, pumpkin pie, and egg custard. The food was great but the company was even better!
Here we have a very simple yet delicious recipe for Bacon Wrapped Shrimp and Asparagus. But really, ANYTHING bacon wrapped is delicious! No seasoning is necessary!
20 pieces of shrimp
Bunch of asparagus
2 packages of Bacon
Wooden skewers
1) Soak wooden skewers in water (this will prevent the skewers from catching on fire during grilling).
2) Wash shrimp, peel and devine.
3) Wash asparagus, snap off tough ends at their natural breaking point, then cut each asparagus into 3 equal parts.
4) Cut bacon in half.
5) Wrap bacon in shrimp, slide through skewer. then wrap bacon in 3 asparagus parts, slide thru skewer securely so they don't fall out, repeat until skewer is full.
6) Repeat and continue with the rest of the shrimp and asparagus.
7) Place the kabobs on the hot grill until bacon is crisp. (Be careful of the bacon drippings as they could cause the fire to go up in flames)
8) Serve!!
Sure enough I've got lots of leftovers, I made a bento for myself for lunch the next day!
Again using my 2-cup Fit n Fresh containers. Top tier contains Kim Chee Fried Rice, bottom tier contains Kalbi and Bacon Wrapped Shrimp and Asparagus.
