Fried Noodles / Fried Udon


Fried noodles and fried udon can be easy to make, the key ingredient is the seasoning package that comes with the noodles/udon. But if you prefer to opt out of that, you can always replace it with - oyster sauce.


3 Packages of Noodles (S&S, Yakisoba, Udon, etc)
1/3 package of Kamaboko (cut into strips)
1 carrot (julienne)
1/2 cabbage or chinese cabbage (chopped)
1 tbs of oil
Optional: 2 tbs of oyster sauce, beans sprouts (1/2 to 1 cup), spam (cut into strips, about 1/2 cup) and portugese sausage (cut into strips, about 1/2 cup)
1) Cook veggies until soft, set aside.
2) Stir fry meat (if using) in big pan.
3) Add oil in the pan, put in the noodles, loosen/separate the noodles 1 package at a time, continue to stir fry.
4) toss in veggies, continue to stir fry.
5) add in 1.5 package of seasoning or add in oyster sauce (pick one, if you use both it will be too salty), mix well. Add more seasoning or oyster sauce to taste.
6) Serve!

Seasoned Soy Beans

























My favorite way to make soy beans is to add seasoning to it. I LOVE the way Gordon Bierch make their garlic soy beans (fry chopped garlic in olive oil, then toss the garlic and oil into cooked soy beans). But sometimes I like to make it "poke" style and it's always a winner!

3 cups of cooked soy beans (some packages will ask you to boil it, while others are much easier - pop it in the microwave)
1 tbsp seasame oil
2 tsp garlic salt
2 tsp sea salt
2 tsp chili pepper (more or less to your liking, can also add a tsp of chili oil if desire)

1) Cook soy beans according to package.
2) Toss all the ingredients together while soy beans are still warm. covered and set aside until ready to serve.

Very simple to do and it's always a hit at potluck! :)

Chunky Guacamole



There are so many versions of this. Some even include Hidden Valley Ranch mix. But I like it the ingredients that my dad used to make his. :)

2 avocados
1 tomoato (diced)
2 tbsp lemon juice
2 tsp sea salt

1) Take the meat of 1 avocado and the diced tomatos and put in a food processer to finely chopped ingredients together. Place them in a bowl.
2) Take the 2nd avocado, cut into chunks, and toss into the bowl and mix well.
3) Add lemon juice and sea salt. Taste and add more to taste if desired.
4) Serve with tortilla chips!

Edamame Rice



Lil' P had a class party yesterday for last day of school. I made my fried noodles using yakisoba noodles, portugese sausage, spam, carrots, and cabbage. I went to help with the class, and found a 'dishlicious' (dish that is so delicious)! I asked what was in it and she gave me the ingredients:

Rice (she used Genmai, but can use hapa rice or brown rice)
edamame soybeans
Furikake (wakame kine, less salt if possible)
Nametake Mushrooms

cook rice and edamemae according to package.
In a large bowl, layer rice with edamame, furikake, and nametake mushroom.
Mix and add more furikake to taste.
Serve!! :)

Spicy Thai Peanut Sauce

1/2 c olive oil
1/2 c lemon juice
3 tbsp smooth peanut butter
2 tbsp water
1 1/2 tbsp sugar
1 tsp Chiracha sauce
1/2 tsp salt

Mix them together and pour over salad or anything that you'd want to "thai" it up. :p

Kim Chee Noodles



1/4 lb of Pork (slice thinly)
1/2 medium onion (chopped)
1 clove of garlic (minced)
2 tbsp Kim chee sauce
2 tsp Chiracha sauce
1 tsp Chili pepper flakes
Kim chee (chopped)
Yakisoba noodles
2 tbsp oyster sauce
1 tbsp white wine


1) Marinate pork in garlic, small amout of kim chee sauce, chiracha sauce and chili peppers for 5 minutes.
2) stir fry marinated pork in a greased skillet for one minute.
3) add in kim chee and bean sprout, continue to stir fry
4) add in noodles, oyster sauce, white wine, continue to stir fry
5) cover, reduce heat to low heat until no liquid is on the bottom of the skillet
6) add more oyster sauce to taste if needed
7) serve!

blondie brownies (aka haole brownies)

2 1/2 sticks of butter or margarine
2 1/2 cup brown sugar
1 1/2 cup sugar
1/2 tsp salt
7 eggs
1 tsp vanilla
4 cup flour
1 tsp baking powder
1 1/2 cup walnuts or macadamia nuts (chopped)

1) mix together butter, sugars and salt.
2) add eggs and vanilla and mix until creamy
3) add flour and baking powder, and mix well
4) add in nuts and continue to mix
5) pour mixture evenly onto a well greased pan.
6) bake for 35 minutes at 400 degrees on the bottom oven rack

Hollandaise Sauce by Tyler Florence

4 egg yolks
1 tbsp lemon juice
1/2 c unsalted butter, melted
pinch of cayenne
pinch of salt

Can't wait to try this out!

English Muffin Sandwich (Microwave style)

I got this recipe somewhere about two years ago. I used to make this for my coworkers for breakfast in the mornings. It's good stuff!

1 english muffin
1 slice cheese
1 egg
2 slices of bacon (ready-to-serve kine)

1) Cut english muffin in half and place only the bottom half on a microwave safe dish. It's easier for the egg if you could cut it so that the bottom has a dent to hold the egg...you'll see why in next step.
2) Crack the egg open and place the cracked egg directly on top of the botton english muffin. (Egg might run off over the muffin, this is fine, you can fix it after it's cooked)
3) place dish in microwave, heat for 30 seconds, then another 10 seconds until egg whites turn, well, white. (don't do this longer than 40 seconds at ONE TIME because the egg yolk might explode, I've been lucky, it hasn't happened to me yet)
4) take out the dish, (you can adjust the spilled cooked eggs back on the bread, if desire) break bacons in half (now you have 4 short bacon), place them evenly on top of egg, then add the slice of cheese, then place the top half of english muffin on the top.
5) place dish back in microwave, heat it for another 20 seconds.
6) serve.

YUM!

Cola Chicken

My mom used to make this for us when I was little. I used to LOVE it! I never did make it, so in an attempt to use up the liter coke we have at home. Here it is!

12 pieces of Chicken wings
Salt and Pepper
1 can coke

Is it really that easy!? YES IT IS!!!

1) sprinkle salt and pepper on chicken, mix well.
2) toss chicken wings in a heated greased small pot or skillet deep enough to hold the cola, cook for about 3 minutes.
3) Stir in the can of coke, and let it boil, then reduce heat and let it simmer until sauce evaporates, about 20-30 minutes. Stir occasionally to avoid burn (especially when the sauce is close to evaporation).
4) Serve.
